この表現は、２０１１年の映画 New Year’s Eve （邦題は『ニューイヤーズ・イブ』）に出てきたものです。

The 2011 movie “New Year’s Eve” is set in New York City.
「２０１１年の映画『ニューイヤーズ・イブ』はニューヨーク市が舞台です」
It tells the story of several characters and how they connect on New Year’s Eve.
「これは、何人か登場人物とその人たちが大晦日の夜に織りなす物語です」
how they connect は「彼らがどのように繋がっているか」。
One male character is deciding if he should try to meet with a woman he had seen only once on New Year’s Eve a year earlier.
「一人の男性役は、１年前の大晦日に１度だけ会った女性と会おうとすべきかどうか決めかねています」
is deciding if ～は「～かどうか決めかねている」です。「決めようとしている」ではありません。
＜meet 誰々＞は「誰々と会う」という意味ですが、meet with ～は「相手と約束してから会う」というニュアンスです。
a year earlier は、訳すときは「１年前」となりますが、「今から１年前」ではなく「あるときから１年前」ということです。
The woman had left a note at the time asking him to meet her again this New Year’s Eve at the same place.
「その女性は、そのとき、今年の大晦日に同じ場所でもう一度会いましょうというメモを残していたのでした」
note は「メモ、手紙、伝言」。
asking him to meet her again は＜ask 人 to 不定詞＞の形になっています。
Listen for the words “you don’t mess with serendipity.”
「you don’t mess with serendipity という表現を聴いてみましょう」

「あなた、彼女に会うんでしょ？」
付加疑問文です。
She’s not going to be there.
「彼女は来ないよ」
You went out for a slice of pizza and you may have run into “the one.”
「お前はピザを探して買いに行って、『その娘』に偶然会ったわけね」
run into ～は「～に偶然行き会う」。
Do you know what that is?
「それを何と言うか知っている？」
Insanity?
「あり得ないこと？」
insanity は insane（狂気）の名詞形です。アメリカ大統領選挙のあと、トランプ氏が「選挙は盗まれた」と言い続けていたとき、２０２１年の初頭に、Stop the Insanity!という見出しを出したアメリカの新聞がありました。
Not insanity, serendipity.Hmm?
「あり得ないことじゃない、すてきな偶然じゃないか。だろ？」
You don’t mess with serendipity.
「すてきな偶然は大事にしなきゃ」
What do you think “you don’t mess with serendipity” means? Is it,

Serendipity is an unplanned lucky discovery and a good way to start a new year.
